7:35 -8:05pm /// Memory of a Tomato:

A composition of melons and tomatoes inspired by Chef Crenn’s first food memory: biting into a tomato. The dish features many different preparations and textures, as some tomatoes are peeled raw, some confit, and others turned to raisins alongside strawberries. The melon is fermented into a vinegar, and the tomato water is turned to a dashi, whipped, and frozen with liquid nitrogen.

Join renowned owner and chef of La Folie, Roland Passot, as he takes you on a journey through one of the “eight wonders of Bay Area dining” preparing a bouillabaisse, a traditional French seafood soup, sure to get you boiling with excitement!
